Creamy Avocado Spinach Artichoke Dip - Dairy Free, Nut Free & Gluten Free!



How to Make Gluten Free Artichoke Dip

Two Methods:

It’s the dairy products that can be the culprits that make this recipe difficult for gluten-free eaters. As long as you read your nutritional labels, you’ll be able to enjoy this dish without harm. If you’re concerned about the fat content, use reduced-fat dairy, but try to avoid fat-free in this dish since it can make it watery.

Ingredients

Servings:2 cups
Prep Time: 10 minutes
Cook Time:20 minutes

  • 12 oz. frozen artichoke hearts, thawed
  • 1 garlic clove, peeled
  • 1 tbsp. red onion, diced
  • 1/2 cup mayonnaise
  • 1/2 cup sour cream or Greek yogurt
  • 1 tbsp. parmesan cheese
  • 1 tbsp. fresh lemon juice
  • Sea salt
  • Ground pepper
  • 1 tbsp. butter
  • 3 tsp. almonds, sliced
  • Cooking spray

Steps

  1. Preheat the oven to 375 °F (190 °C) and coat a small over-safe dish with cooking spray.

Prepare the mixture

  1. Empty the artichoke hearts into your food processor.
  2. Add the garlic clove.
  3. Close the lid of your blending container and pulse the ingredients on and off until they're finely chopped.
  4. Empty the mixture into a medium mixing bowl.
  5. Add the onion, sour cream, cheese and lemon juice to the bowl.
  6. Sprinkle in a pinch of salt and pepper, to taste.
  7. Mix the ingredients together with a wooden spoon until well blended.

Plate, Bake and Serve

  1. Spoon the mixture into your baking dish and set it aside.
  2. Melt the butter in a small skillet over low heat.
  3. Add the almond slices and toss them in the butter with your wooden spoon until they're well coated.Sauté them for about 5 minutes, or until they start turning golden brown and the butter starts to bubble.
  4. Place the buttered almonds on top of the dip.
  5. Place the container with your dip on a cookie sheet.This is a good rule of thumb to prevent your oven from getting dirty and from things burning on the oven floor, changing the flavor of your dish.
  6. Bake the dish in the center of your oven for 20 minutes or until the edges start to bubble.
  7. Remove it from the oven and allow it to cool slightly for a few minutes.
  8. Serve the dip hot with gluten-free crackers or crudites.
